If you are intending to use the entire pack in a single sitting, then just defrost the whole pack. Otherwise, thaw the meat in a chiller first (the process may take up to 1-2 days), cut open the packaging and repack into smaller portions (according to your needs), and throw it back into the freezer making sure that the chicken is always chilled in the handling process.
Take out what you need to defrost or thaw each time.
